In Vietnam, rice noodles are called pho and usually eat them
in the morning. It smells and tastes unique, even nutritious and is known for
its low calorie.
The reason why Southeast Asia is especially famous for its
rice noodles is that it uses Indica rice, unlike the wheat-rich Northeast Asian
region. Moreover, due to the climate of Southeast Asia, the strong addition of
scent has led to the development of Southeast Asian rice noodles in an
independent difference from those of Northeast Asian countries.
History of Rice Noodles
Originally, the Vietnamese
did not eat beef, but in the mid-1880 the French army, which occupied Hanoi in
northern Vietnam, gave them the recipe, and they began to eat the beef with
rice noodles, a traditional food, around Hanoi. The word "Pho" also
came out from "pot au feu" for the French army's meal. After the
1950s, when Vietnam was divided into North and South, Hanoi people who went
south began selling beef noodles in Ho Chi Minh City, which spread throughout
the country.
Vietnam's rice noodles can be divided into dozens of
flavors, depending on the ingredients or the type of broth, and each region has
its own unique characteristics. Basically, rice noodles are served with beef
broth with mung bean sprouts and coriander. Then put some squeezed sour lime
juice together.
The main ingredient of rice noodles in the broth. Rice
noodles are divided into two types: "Pho Bo," a beef rice noodle that
is eaten with beef meat on a sweet broth that has long been cooked with beef,
cinnamon and flavoring, and "Pho ga," a rice noodle with chicken
flesh on a plain chicken soup made from boiled chicken bones and meat for a
long time.
Rice noodles provide a glimpse into the regional differences
in Vietnamese tastes, with southern Vietnamese enjoying " Pho Bo "
which is sweet and oily while northerners enjoying “Pho ga,” a plain.
